I found this stuff at the store, I thought someone here had mentioned it before but couldn't find it.
It's a "noodle" substitute, in spaghetti, fettuccine, or angel hair pasta shape. No Cholesterol, No sugar, gluten-free, vegan, and kinda expensive (over $3 for 8oz), but just 3g of fiber in a 4oz serving.
I got some the other week, and finally tried them tonight.
Those that like their pasta with a good al dente bite will be disappointed. I like the taste, but texture wise they reminded me of slightly over cooked ramen noodles (they "felt" curly like ramen)
I made some spaghetti sauce with left overs tonight to try with these, read about it on my main site.
You're supposed to be able to find these at Whole Foods and lots of other stores... but their web site is having issues so I won't link it here. I keep getting some kind of weird google blocking alerts.

I wanted to try these, but I heard they have a funny fishy smell to them. Did you find that to be the case? Or maybe it wasn't the tofu ones - maybe it was those miracle noodles I'm thinking about.
I don't eat enough pasta to matter, so I think I'll just stick with Dreamfield when I want to splurge. I have a box in my cabinet that I still haven't used post-surgery.

I didn't notice any smell...
The non-tofu added one, straight shirataki, are supposed to be kinda rubbery. The tofu I guess helps counter that.

I know hungry-girl raves about these. I'm a bit afraid to try them. There is apparently a big taste difference btwn the tofu and the regular ones. The tofu is supposed to have less fishy taste. I cant get them locally and they shipping is terrible anywhere I've found them b/c they need refrigerated. So for now, I wont be tempted. Hmmmmm... I've been wondering about a way to make a lower carb spaghetti. I'll have to to Whole Paycheck Market and see if I can find them.

I've had the tofu shirataki...I think it's the House Foods brand. They do smell like fish when you open the bag, but if you boil them for a couple minutes and then rinse them off, the smell goes away.
The are kind of rubbery and hard to chew, but if you don't mind the texture, they don't taste bad. Personally, I don't like them with spaghetti sauce, because I just can't convince myself that the texture is actual pasta. However, I do like them in Asian dishes! It's not a bad substitute at all for the noodles you would get at Panda Express or someplace like that.
Just my two cents....for whatever that's worth!

T2 - I am with you on that one! Spaghetti squash with some alfredo sauce and chicken - put that in a casserole and sprinkle some panko crumbs and parmesean on top - bake it up -----> YUM!

I like the tofu shiratake but I rinse them for longer than I cook them! Also really good once rinsed and thrown into a stir fry (great with Broc Slaw) get the Fettucine. . .the angel hair kinda creeps me out

I use zucchini for my 'noodles'. I use a potato peeler to 'peel' off long strips of the zucchini.. then I toss the strips in a pan with olive oil, butter and garlic and cook them to the consistency that I want. When I am done I either put some meat sauce on top... Some alfredo sauce with chicken. or a little more butter, garlic and add some cheese.
They are yummy.. Next I am going to try using my weird pampered chef tool that makes stuff wavy when I cut it and see if I can make lasagna noodles out of big fat zucchinis and see if that works as a substitute.

L, I believe Eggface has done lasagna using such noodles... so should work great.
I have some I picked up at the farmers market, might try making some "noodles" tomorrow...
but I also found the Shiritaki noodles at my regular grocery store at about half the price of the other store... picked up fettucini and regular. I'm thinking of trying to make a mock alfredo sauce using pureed soybeans... we'll see.
