Muffin in a Minute
1/4 Cup Flaxseed Meal
1/2 teaspoon Baking Powder
1/2 teaspoon cinnamon
1 tablespoon Splenda (optional)
1 egg
Mix everything together in a coffee cup. Cook for one minute in the microwave. Turn the cup upside down to take the muffin out. If it looks wet, let it sit for a minute or so. I have these for breakfast. You can add blueberries, or try other additions. Some people add a tablespoon of cream cheese before cooking.
What you can add is a teaspoon of Buttermilk Blend. That is powdered buttermilk and you buy it in the store usually close to evaporated milk and nonfat dry milk. It is in a can that looks like baking powder. When it combines with the baking powder, it makes the muffin in a minute really rise up and the texture is much lighter.
When you add the buttermilk blend, then microwave it in a cereal bowl instead of a coffee cup. It will raise too high and run over in a coffee cup.

Ok - before wls I wasn't really into sweet stuff - but I can't get enough of these! If you leave out the cinnamon you can use whatever flavour you want. So far I've had: Strawberry jam bits. Rhubarb and ginger. Rhubarb, ginger and grape. Coconut. Coconut and banana. Cinnamon and raisin. Chopped nut and dark chocolate chips. Fresh blueberries. And one that was like carrot cake with shredded carrots, mixed spice and chopped nuts (you could do frosting with cream cheese, lemon juice and sweetener, but I didn't). I can't wait to try pineapple and coconut, then coffee and walnut. Also could do savoury ones, maybe sundried tomatoes and cheese... I love MIAM thank you for showing it to me

I tried one this morning and NOM. Since it's not actual flour and contains Omega 3's, doc said I could have it on my full liquid diet as long as I don't add sugary stuff to it. It was nice to chew something.

Kierie - I would be careful about dryness if you sub almond meal. Flaxseed meal can replace oil in any baking recipe, just like applesauce, so you might be risking the moisture of your muffin. You'd just want to add something for that.

My favorite version is with Hershey's dark cocoa, SF chocolate chips from Sensato via Netrition.com and a tablespoon of Hershey's SF chocolate syrup. My sweet husband makes them for me and I have now dubbed him the "Muffin Man". Sometimes we add the powdered PB for a difference and a little added protein. So far the protein powder addition hasn't been too successful. Once, we put some SF caramel syrup over it and then some more Hersheys and it was smashing! Okay - I am still a foodie, but this is actually good for us. You just have to watch the calorie count on the additions.

I've made it with various mixed flours, but always use half flax meal because of it's nutritional value, mixed with:
Soya flour (needed to add a little water), Oat meal (I just put rolled oats that I use for porridge in the belnder), Corn meal, (made a lighter texture), Chickpea flour.
Gonna try some other bean flours that I found in an Asian Supermarket.
Has anyone tried to make quinoa flour in a blender?

Since this disappeared as well I also want to remind y'all of another of my favorite uses for this MIAM.. I cook it up.. Cut it into 3 slices. Dip the slices in beaten egg then toss them in a frying pan with some PAM sprayed in. I cook them up like french toast then take them out of the pan and drizzle SF maple syrup on top along with a handful of blueberries or strawberries, etc.. YUM.. French toast without the carbs.

Lynnda! Did I tell you that I love you? French toast is one thing I periodically crave like a crazy woman!! Perhaps tomorrow I will try a flax/almond meal hybrid! then top it with Butter and sf jelly. . .I need to get SF syrup however Syrup is also something I crave so I dunno if that's a good thing or not.

I didn't make the Toast De Francais yet However! I did make a small adaptation I made the actual muffin in a minute for me today 1/2 Flax 1/2 Almond meal 1/2 tsp Baking Powder Egg cin nutmeg and ginger Totally forgot the vanilla and used Butter cooking spray for the fat Probably 1 ish T of splenda
it was so nice and light!!! with a little SF Rasp Jam I'm pondering keeping a container of egg beaters at work and premixing some!

I get mine at either Kroger or Publix - may be found in the baking aisle, but I have better luck in the organic section. I buy the Bob's Red Mill Brand. Whole Foods also carries various brands of it.

I ave a new avourite flavour - LEMON, it's sooooo goood  Lemon Muffin in a Minute 1/4 Cup Flaxseed Meal (I used 1/8 flax and 1/8 soya flour) 1/2 teaspoon Baking Powder 1/4 teaspoon ground ginger Zest and juice of 1/2 an unwaxed lemon. 1 tablespoon Splenda (optional) (I changed this to 2 tablespoons to balance the lemon) 1 egg Mix up as the original, but save the lemon juice to mix in separately, last. It reacts with the baking powder and froths up, so mix it in good and fast. Then get in the microwave - for....yes....1 minute. I enjoyed this lemony goodness with a serving of creamy ricotta cheese - ooooo, heaven, and so simple.

Where does one buy this flaxseed meal?? I bought a bag of whole flax seeds at the grocery store. I thought they would be just like sesame seeds but learned on web MD that they're very beneficial to your health but best used when ground to get the full benefit (whole seeds could digest without breaking down). Have a couple tablespoons of ground flax seed each day - put it in whatever you'd like. Wish I'd of known that before I bought the whole seeds, guess I'll have to grind my own as I go. Oh well, live & learn.

Freshly squeezed lemon and a bit of ginger was the biz! I'm doing another tonight, been looking forward to it all day  Barb - just put the whole seeds into a blender/liquidizer to make your own flax meal. Tha's what I always do because iys MUCH cheaper to buy the seeds.

If you are grinding up your own flax seed, here is a little something I learned... http://simplyrecipes.com/recipes/tip_blender_and_mason_jar/ a regular Mason/Ball jar will fit on a standard blender. You can grind up what ever and have it already in a small storage container  P.S. also good for grinding spices!!

I wanted to get the nutritional value on this recipe, so I worked it up for everyone to see. I took the nutritional data from Nutrition.com and just added up the ingredients. So if I am wrong I apoligize. I just bougt a bag of flax meal and am going to have a muffin in the morning for breakfast. I hope I calculated it right.

Calories - 323 (from fat 193) Total Fat - 22g (Saturated - 3.5g) Trans Fat - 0 Carbs - 23; Fiber - 12g; Sugars - 9g; Protein - 14g

I think the calories and carbs are overstated. My flax is 120 calories, and all carbs but one gram are fiber. A large egg is 80 calories, and the Splenda, baking powder, and cinnamon are neglible. It will be more with differing additions, but where were the majority of calories from when you checked it? One recipe I saw somewhere that had a calorie count included a tsp. of butter.

They may very well be overstated. I went to Nutrution.com and typed in each of the ingredients and wrote down the values it gave . Then just added them up. I did calculations to adjust from what the site said to fit the size of the ingredients, but perhaps i wasn't right. So just ignore the post. I will try again.
