This is really a staple for us, though now we usually have variations. When we saw this on that webisode we HAD to try it. I think the first version we saw also included cinnamon. That just shows how versitile it is. For the next few days I was giving the recipe to EVERYBODY.
I've got a pumpkin version I will post in the next few days, that uses the canned pumpkin (not the pie filling). It is still a work-in progress, and it takes longer to cook, but I figure if I put it out there the other Freaks improve it quickly.
Our particular goals with recipes are simple. We want to keep the non-protein carbs down, avoid simple sugars entirely, and get as much fiber as we can stand. That makes this recipe ideal. As as the weather turns colder, the muffins become more yummy.
We have added nuts, of course, but we have to keep that to a minimum. Even a few go a long way. We tried fortifying it with protein powders, but that makes the texture more like... foam rubber, I guess. To add moisture I have added applesauce (doesn't take much) but we don't do that much because most of it gets thrown away using a tablespoon at a time.
I used the same approach, adding some water, to try pancakes, but that really needs a lot of work. Plus, pancakes need butter and syrup, so...

I made one the other day, half flax meal, half whole grain baking mix and like it much better.
Only ate a few bites.. but then last night I cubed up the rest in a small ceramic dish, scrambled an egg with a bit of cinnamon and vanilla, poured it over the muffin, let is soak overnight (covered) and then popped in the toaster oven for bout 10min at 350 (uncovered).
Sort of a baked French toast/bread pudding sorta thing.
It was very good, but needs more egg next time, the top got a lil dry, a crust like top, the bottom was very moist and good. Drizzled a touch of syrup over it.
yum.

I did a variation of this... instead of all flax meal, I used my muilti-grain baking mix, and instead of egg I made a "goop" of flax meal and water that I've read can be subbed for egg in baking. since I lost the protein from the egg, I add a bit of protein powder. and I did mine with cocoa to make a chocolate muffin.
gonna play with this a bit more before sharing the final results, but it cooked up in a minute, and was very light and airy...

I made a new flavour last night - coffe and walnut - yum! Just left out the cinnamon and put in some coffee dissolved in a couple of tsp warm water (mixed in at the same time as the egg) and about 1 oz walnut pieces. Cook as normal

I added 1 teaspoon of nonfat greek yogurt - YUM - made it lighter and moister Also LOVE toppin' my muffin with sugar free caramel sauce.

Good idea with the yogurt, I've done that too - yum  Another new one this week: Plum and ginger Make the usual recipe and instead of cinnamon I added 3/4 teaspoon ginger powder and 2 small choped plums.

Well, I don't really like it when it's all flax myself. I do a variation using a whole grain baking mix and some flax.. and if I don't have eggs I use a flax/water goop to sub for the egg.

I'm tellin you guys.. try it as 'french toast'...
Make it.. slice it into 3 little slices... coat with egg and cook up in a pan.. then add some berries and some SF syrup..
I LOVE IT! I have missed French Toast so much! :-)

So I just had my first MIAM. Very interesting. At least now I have something to use all my flax seeds in! I ground them in my magic bullet and then just baked in the same container. Kind of like Paula's idea with the mason jar. I will probably try to mix in some spelt flour or something like that next time. Also, because I am only 7 weeks out, I was only able to eat about 1/3 of it. I did it like the french toast. I will try it again with some alterations.
Kierie, I have boncoccini (mozza pearls) in my fridge and wondered if they might work in your cheese MIAM?

Peanut Butter - I haven't got any PB2 yet, but I use all natural organic stuff... ya know the kind ya have to stir. Well once its in the fridge it turns hard as a rock - which is awesome for MIAM I scoop out about 1 tsp of it and then chop it up into bits and stir it into my muffin right before nukin' it. Top with SF Jelly and you got a pb and j flavored. Top with SF hot fudge and you got a yummy choclate and pb (aka Reese's) flavored one I made a banana bread flavored one the other day using banana flavoring (banana's themselves still make my blood sugars spike - even a little bit of them) I also used a drop of (just a drop) of maple flavoring/extract, cinnamon and nutmeg. It was pretty tasty...but a little fake butter stuff on it ...yum. Also did one with orange extract and topped with SF hot fudge - kinda like those chocolate oranges that you smash to open. I think I shall try to tackle a savory one next.

That sounds fab! I made my first one for dinner tonight - it was pretty good. I can see where the 'sponge' comment came from. I expected a muffin like texture, but it's more like a scrambled egg....spongy. Which I wasn't expecting. But once I got over that, I did enjoy it very much. I made mine as directed but added 1/3 of a mashed banana and then topped with a small amount of all natural, no sugar apricot jam. Yum!
