I have spent just about all day on this blog. She is not WLS, but she is low carb and sugar free. Really easy, interesting recipes that I am anxious to try!

Last night, I made 2 of her recipes.

Protein Cookie - I looked at this thing and went, "REALLY?" It's just protein powder and butter, for heaven's sake. Cooked in the microwave. No way! Oh....yes way! These are awesome. I couldn't believe it worked!

Carolyn's Pecan Pie Muffins - there are no words for this one. I have made muffins galore since WLS, trying to find one that works for me. This one is IT! Really tasty, not too sweet. I still love those Blueberry Ricotta ones I made, but these are great, too.

This weekend, I'm gonna try her Thin Pizza Crust (made with cheese), as well as Stephy's Chicken Stuff.

Man, cooking has really become an adventure for me!

This is my "go to" online cookbook. I love that every recipe has been tried and photographed by the site's author so there are no surprises.

I have made quite a few of her recipes and other than the baked goods (I think true atkins baked good recipes are way too dry for anyone with our sized tummies) everything was just as she said it would be.

I've tweaked many of the baked goods by subbing just a bit of regular flour for protein powder and that seems to do the trick.

Countrymom - I do that with almost every recipe, and I learned from Melinda to combine flours, which helps, too. If they use all almond meal, I mix the same amount as a combo of coconut flour, almond meal, and either soy flour or Carbquik. That's helped quite a bit. I'm also experimenting with erythritol, xylitol, and Stevia, as in the Healthy Indulgences blog, since Splenda doesn't hold up well under the heat.
