In case you didn't get to write this down from the Food Porn episode (one of my favorite eps, BTW), here is the recipe straight from Linda's blog. Enjoy!

35-SECOND CHOCOLATE CAKE

Now here’s a sweet little sweetie that you can mix and cook in the cup and in – alright maybe 1 1/2 minutes tops – you’ll have a cute little cutie for a guilt free snack.  (But it’s only 35 seconds in the microwave…so there!)  Soooo good, for so not a lot of work!

The best part?  No huge 16-serving monstrosity sitting on your counter staring you down every time you pass by the kitchen.

I’ve been experimenting with different flavors (a White Velvet and a Lemon one) so stay tuned…check back…don’t go away!

2 tablespoons flour

1 1/2 tablespoons Splenda Granular or Whey Low powdered

2 teaspoons unsweetened cocoa powder

1/4 teaspoon baking powder

1/8 teaspoon  instant coffee crystals – optional, but brings out the chocolaty YUM!

Pinch salt

2 tablespoons milk

1 teaspoon olive oil

Drop of vanilla extract

Spray a coffee cup or ramekin with vegetable cooking spray.  In the cup combine the flour, Splenda, cocoa powder, baking powder, coffee crystals and salt until no lumps remain.  Stir in the milk, olive oil, and vanilla until smooth.

Bake in the microwave on high for 35 seconds.  You may need to add 5 more seconds, but don’t overcook or it will be rubbery.  It should be moist on the bottom and will continue cooking as it sets.

Serve with chocolate sauce…a sprinkle of powdered sugar…whipped cream or eat plain as a brownie.

(Use hot or cold leftover coffee in place of the crystals and milk to lower the calories even more.)

Total Recipe: 110 Cal; 2 g Protein; 5 g Fat; 14 g Carb; 1 g Fiber; 0 g Sugar; 0 mg Sodium

Tried this one out on the non-freaks in my house and it was a hit. Had no SF chocolate sauce so I drizzled SF Hazlenut instead. OMG! Add a cup of espresso and I'm lovin life.

Sounds fabulous.  My husband makes a wonderful dark chocolate version of the muffin in a minute that is wonderful too.  OMG, I laughed so hard at this episode.  I SO know all about the FOOD PORN, and the banana scene had me laughing to tears.  She did it so very well.   Grin

I put hershey sf chocolate chips inside the batter before nuking.  And, then I added a little kroger no sugar added frozen vanilla yogurt, some monin sf chocolate sauce, whip cream for my very own hot fudge cake.  OK so the calories skyrocketed there...  but that was a month ago...  and I have lost a few lbs since then so it didn't hurt me all that much... cuz every once in awhile, a girl just needs her chocolate!

I bought some Bob's Red Mill 10 Grain Pancake & Waffle mix... figured it may be a good multi-purpose mix..

Tried the cake using it today, did 2T + bout 1/2t of the mix (to cover for flour and baking powder), then instead of cocoa and sweetener, used 2T of SF Nestle's Quik.

turned out rather nicely...

so... I had to try a yellow cake... and I think it turned out rather well.


click the image for step by step instructions, but basically...

take 1 T unsalted butter at room temp and cream in 1 T of Splenda or equiv. Mix in yolk from 1 egg.

Mix in a separate bowl, 2 T multi-grain baking mix (or 2T flour and 1/4t baking powder) with 1T vanilla protein powder.

Add 1 T milk to the egg mix, then half the dry and stir in, followed by another T of milk and rest of try, mix till smooth.

Put in ramekin or large coffee mug that you spray with no-stick spray and nuke for 45 seconds.

I found a mini, silicone "bundt" cake pan at the dollar store.. perfect size for this. Made one to bring to my mom tonight, cooking her a slightly belated birthday dinner. I'll have to take a pic and put it up later.

Well, I can't believe it took me so long to try this......

But it's absolutely DELISH  Grin

I didn't bother because I was so happy with my MIAM, but this is completely different.
 Mine came out all moist and slightly gooey....yyyuuuuuummmmmyyy!

So delicious, I had to try it twice  Tongue

Di - I've done the chocolate, the lemon, and Rob's yellow cake version. I did NOT like the lemon, and that says a lot for me, because lemon is my favorite flavor of anything. I stick to the chocolate on this recipe, because I don't want to mess with perfection!

If I want lemon, I go to the MIAM recipe.
