Ok, got lots of fresh veges at the farmer's market...


So what 's the logical thing to do? Make salsa!


So to up the protein, I added some soybeans. I got the soybeans dried and cooked them in the stockpot overnight.

With the Trader Joe's soy and flaxseed chips, very good stuffs!

The dried soybeans cooked well in the crockpot, and much cheaper than canned of course. Do about 1 cup dried beans and 3 cups water in the crockpot for about 5-6 hours on low.

I haven't tried yet, but supposedly they'll freeze really well after cooked for using in last minute meals.

OK, now THIS looks like my kind of cooking! YUMMO! Aren't those chips the best? They're thicker, too, so they hold up well to thick salsa or dips.

I gotta get to the market! And I wanna try those soybeans, too!

Love the TJ's flaxseed chips!
I have everything for salsa, except my cilantro has died....
I'll still make it anyway. Adding some black beans would be good too!
