I was looking for Tammy's post to see what she's been cooking. So, I'll tell you what's been going on here.

I made an apple cake recipe (it's on my blog) that turned out good. I had a vita muffin mix I got from netrition and tried it out. (Banana sugar free). I guess if I didnt bake a lot, it would be OK. But, I think my muffins are better. DH and kids liked them.  Oh, I also made eggfaces protein fudge. It was pretty good. I made a peanut butter/choc version.
I have a chicken in the crock pot. I'll just debone it and save broth and meat for meals this week.
It's a beautiful day, so going to put up some christmas lights - Cya!

Oh ya, just realized Tammy's on vacation! I hope she's not cooking!

I did the fudge... and mine did not firm up at all... it tastes ok, but it's all gooey. i'm probably gonna drop a bunch in with my protein shakes to use it up.

Well, my local supermarket had pork shoulder joints at half price - so I got 3!  Cheesy

Not the healthiest cut of meat, but definitely a tasty one. I cooked one right away (roast) and froze 2 for later.

I also found lots of chicken thigh meat at reduced price - another favourite. I froze some and made a yummy curry to bake in the oven with the pork. That'll do 1 meal to chill in the fridge and 3 for the freezer.

And lastly, I used up some chicken breast, mixed with some leftover beans, onion, egg and seasoning to make some meatballs. I coated them in cornmeal and baked in the oven with the other stuff. Then cooled and put into a bag and froze. The cornmeal coating stops them sticking together, and I can just take out as many as I need.

A productive cooking weekend for me too  Smiley

I cooked up a beef roast in  my Nuwave oven - should have used the crock pot, and at the same time made up some mung bean sprouts and quinoa (mixed them together and portioned them out for several meals).  I'll portion out the beef later.  It really helps to measure the stuff out into containers so it's just ready to grab and go.  It's hard not to have those greedy eyes on the beans though since mushy stuff doesn't fill me up like the denser meats.

Love the NuWave, but some tough cuts of meat do better in the crock pot.  Marinating helps, though.  We use the NuWave more than anything else.   Cheesy

I just got a NuWave... for free even! (did some computer work for an old co-worker, she heard I was looking in to getting one and gave me one she'd received as gift and never used).

I did a chuck roast in it, and while it wasn't as tender as in the crock pot, it was good. Just slice it really thin and cross the grain. I cut up some chunks and put in some progresso soup tonight.

I did a baked omelet yesterday, but it woulda been quicker in the toaster oven.

Did some chicken breasts right from frozen last week.

I wont even ask what a Nuwave is, because if I bring one more appliance (read "toy") into this house, I think my hubby has true grounds for divorce. ("Your honor, I REALLY need 3 blender, 4 crock pots, a roaster, an indoor grill, etc....  Tongue)

Oh - about the fudge, Mcnee, it WAS very sticky. I am, of course, going to try a tweaked version. I think if I use some low fat cream cheese, we can get some of the stickiness off and more of a 'fudgy' consistancey - I'll let ya know.

It would help if I did learn how to properly cut the roast, but I cooked it from frozen, too.  That is a great feature. Cheesy
