MuffinMan ChocMania Muffins
(not to be confused with Linda's Muffin)
This muffing is descended from the Muffin-In-A-Minute of BTV fame, just like Benjamin Franklin was descended from some guy.
Stuff you need:
1/4 cup Flax Meal
1/8 tsp Baking Powder
2 TBSP Splenda (r)*
1 TBSP Hershey's(r) Special Dark Cocoa **
1 TBSP Hershey's(r) Sugar Free Chocolate Syrup ***
1 Egg, Large
1 TBSP Sugar-Free Chocolate Chips (Optional) ****
(just for fun, you can add a few chopped nuts, but remember the calories)
We also have this low-fat peanut powder. Sometimes I add a tablespoon or that, for variety.
* 2 heaping or 3 level. Never tried more than three. I like two level and IndyKitty likes three.
** C'mon, get the dark stuff!
*** OK, so its water, cocoa, glycerine, and sweetener, so we could use water, I know. Who is the Muffin Man here?
**** Optional! Yeah, right! OK, these are still great without them, but really., optional?
Use an appropriate microwavable container. We like the round Ziplock containers with the blue screw-on lids, 2 cup size. You can still use a microwavable coffee cup, but wider is better. The BTV cups are great.
Put the dry ingredients in first, except for the chocolate chips. Stir until uniform.
Add the egg (without the shell) and the chocolate syrup, then stir well. Be sure to stir to the bottom or you will leave dry
ingredients on the bottom - and that is true with any of the MIaM recipes.
Add the chocolate chips and stir them in well.
Microwave on full power (Nuke) for 1 minute and 13 seconds.
If you use a coffee cup, take the finished muffing from the microwave and dump it from the cup. Either way give it a full minute to
set before whatever.
Notes
Don't lick the fork! It has raw eggs on it! Only theMuffinMan can lick such forks with impunity.
Coffee cups seem to accumulate moisture while cooking, evident when you turn the muffin out. The Ziplok containers don't seem to do this. For IndyKitty I make the muffin, wait one minute, then screw on the lid so she can take it with her. Especially if I ice it.
Icing? More about that later, maybe.
More notes: B-flat, C, F#.

YAY! Finally, Keilah's husband posts the famous Chocolate MIAM. 'Bout time! Gonna try this one this week. Wonder if I can sneak chocolate protein powder in there somehow?
