MuffinMan Pumpkin Muffins

This muffing is descended from the Muffin-In-A-Minute of BTV fame. This recipe is imperfect, but it is the right time of the year, and this bunch of folks/freaks is good at improving stuff. Actually even at improving lives. While quite edible this is still in beta testing. We like it but I want it better.

Maybe Big Mickey (The famous Pirate Chef) can perfect this recipe and claim it for his own.

Stuff you need:

1/4 cup Flax Meal
1/8 tsp Baking Powder
2 TBSP Splenda *
1 Egg, Large
1/2 tsp Pumpkin Spice **
1/2 tsp cinnamon **
1 to 2 Tablespoons chopped nuts (Hazelnuts, Pecans, Walnuts, your call)
1/4 cup canned pumpkin ***
1 TBSP Oat Bran

Use an appropriate microwavable container. We like the Ziplock containters with the blue screw-on lids, 2 cup size. You can still use a coffee cup, but wider is better. Those elegant BTV mugs are ideal!

Put the dry ingredients in first. Stir until uniform. I like to stir with a fork.
Add the egg (without the shell), then stir well. Be sure to stir to the bottom or you will leave dry ingredients on the bottom - and that is true with any of the MIaM recipes.

!!! Optional Enhancement: Before nuking, sprinkle the top of the batter lightly with cinnamon and Splenda, and then lightly spray with cooking spray (spam it, as the lady said). Easy on the spray, we just want to moisten it a little. !!!

Microwave on full power (Nuke) for 1 minute and 33 seconds.

If you use a coffee cup, take the finished muffing from the microwave and dump it from the cup. Either way give it a full minute to set before whatever.If you use that Ziploc container then just leave it uncovered for about a minute.

* 2 heaping or 3 level. Never tried more than three. I like two level and IndyKitty likes three.
** Might want more of this. Pumpkin spice is Nutmeg, cinnamon, cloves, and is quite pricey for my taste.. If you want to mix up spices, then Go Colts!
*** I don't really know how to handle the fresh pumpkin here. Remember that canned is like cooked, and fresh is not. This cooks in less than two minutes, and the various members of the squash family cook best slow and long, so I just settle for canned.

Beta Notes:
The pumpkin adds moisture and cooking time. The oat bran compensates for the moisure, and adds a nice texture element. One might just use more flax meal.
I have tried the low-cal cream cheeses, addling small amounts and stirring it in. This did not come out as expected.

Jake - I'm so glad you're now visiting here regularly. I know several freaks who are going to thank you for your efforts with the MIAM.

BTW - have you tried Diane's version with lemon and ginger? Really good!

Sounds yummy but what "stage" is this recipe appropriate for? I expect to be able to progress to Phase 3, purees, by next week. Maybe it would be ok for puree if it is made without the nuts? Suzette

Another poster said her Dr. gave the green light for MIAM during the liquid stage.  Something about the make up of the flax.  So remove the nuts and proceed slowly....but deliciously!

Suz - I agree with Kiersti. Make it, try it, but nibble it! And then wait a while before you take another nibble. Melinda is 3 years out and can't eat them at all - she says they sit in her pouch like a rock. Everyone is different, so just experiment cautiously.

Yeah, I can gobble 'em up!

BUT I'm 15 months out AND I only use 20g (2/3 oz)  flax instead of 30g (1oz).

Also, I find it useful to have things that "sit in my pouch like a rock" - if I have cravings or "binge urges", then I scoff down a MIAM or a big raw carrot, and I'm so full that:
  • I'm satisfied and
  • I CANNOT FIT ANYTHING ELSE IN  Grin

Early post op - be very cautious. As everyone says: tiny nibbles, or else YOU WILL PAY LOL  Cheesy

Well now. I usually do not eat these in one sitting. I like to take this in four servings, or maybe three. By spreading out like that I get fiber (and protein) spread out over the day. I could make smaller ones, but I am quite lazy, so I like to make a full-size one and spread it out.

I find that some varieties are great cold. I'll eat my fourth, then stick it in the fridge and get it out later. It is a matter of taste. I like cold pasta, for instance.

One of these would really fill me up, and I'll be one year out from my R&Y in December.

High-fiber needs water to work for regularity, at least with me. Since I can't drink with it in the pouch, I drink while I am waiting for it (I like decaf iced tea), then drink again after the muffin, one my time has expired.

This might be too much for some people. I find that baked fish, like tapapia, is almost too much for me. It makes me feel uncomfotably full fast, so I have to watch it. On the other hand foods like this help me get back in touch with how my pouch works.
