Everybody has those days when they just too busy to cook. Let me throw a new challenge at you. Tonight I am preparing dinner for seven in a hotel room. I have one pot, one skillet, two burners, a microwave and a coffee pot.
 The menu is skewered salt and pepper shrimp with a lime garlic aioli, a salad of field greens, mandarin oranges and a homemade cranberry dressing, pork tenderloin medallions served on the bed of the summer roasted ratatouille and Italian affogato al cafe (Homemade sugar free ice cream with espresso syrup)

 Service is in two hours. I'll let you know how it goes.

AMAZING MEAL!   The plates or so clean I may not have to wash them.  I think it was the homemade ice cream that put them over the top.  I chopped up a Choklat protein bar and sprinkled it over the top before I poured in the espresso.  I got to watch their eyes roll back in their heads. I convinced seven people tonight that eating healthy was a really good idea and that you can do it anywhere!
