I've never eaten them in anything other than spinach & artichoke dip and I've never cooked with them before. I read that they'd be good in spaghetti sauce. So, I have my jar - now what? Do I drain & rinse them before they go in the sauce? I know somebody out there knows...

Yes.  Drain and rinse gently under cold water.  You may want to chop them a bit too.

Barb - if you like the tanginess of them, they are also excellent in salads or soups. There are also other pasta recipes they are good in as well - check Rachael Ray - she loves to use them.

I have yet to find a way I don't like them and I do not believe I ever tried one pre WLS.

I am assuming you got the packed in water kind, because the packed in oil, though VERY tasty, are just a bit much...Smiley

I love them on pizza, so I'm going to venture to say anything with a pizza like sauce would be super. The frozen ones are good roasted...
