Sorry, I said I would post this recipe after I tasted it but life always gets in my way.

So! What you'll need:

1 cup Pumpkin Puree
1.5 cups Protein Powder
2 eggs
1 cup Splenda (May substitute honey)
1/2tsp. Baking Soda
1/2tsp. Cinnamon
1/2tsp. Ground Cloves
1/4tsp. salt

Okay, blend puree and eggs then add all the tsp. ingredients followed by protein powder... good idea to hand mix the protein powder before using mixer. Then use mixer to blend well.

place into 8x8'' pan, set oven at 350 degrees and bake for 20-25 minutes (5 more minutes if you use honey).

Nutrion Info based off of Soy Vanilla Protein Powder and is per bar if cutting recipe into 10 bars.
Each
82.5 Calories
6.5 Carbs
2.6g Sugar (Natural from pumpkin, unless you added honey, then sugar will be a LOT!)
12.7g protein

The entire recipe (Incase you do like me and eat them as snacks in mini bites)
805 calories
65 carbs
26g sugar
126.5g protein

**Remember to divi it up equally and divide the above by the number of pieces present to get nutrition content.

I cut them into around 20 chunks and pop them in the freezer. I grab and go small containers or add a few chunks to protein drinks for flavor. The best part about this recipe is the smell!  Honestly the day I make it I don't even eat any cause my house smells like amazing pumpkin pie so I sniff . One recipe will last around a week and a half for me.

I've not had a lot of luck with homemade protein bars, but this one sounds like it has merit.  I'm looking forward to giving it a whirl when I get home this weekend.  Thanks!!

I'm not usually a huge fan of pumpkin - but I might have to try these!

I think this would be great with some cocoa Powder or NSA Cocoa and some instant coffee Smiley
