This is not my recipe although I did change it some!  Ina Garten gets the credit!  It is incredible!

Chicken Tenders (1 or 2 packages) washed and patted dry
1/3 C Olive Oil
1 Cup Chicken Broth
6-9 Garlic Cloves Minced or 3 TBSP of the jarred stuff
1 1/2 tsp of Italian Seasoning
4 small lemons
1 tsp dried Thyme
salt and pepper to taste

Preheat oven to 350
Spray 13X9 pan with non stick spray and set aside

In a small sauce pan heat olive oil on medium high heat.
Add garlic to the pan for 1 minute exactly - do not brown.
Turn off heat.
Add broth and thyme and italian seasonings
Zest 2 lemons directly into the sauce pan.
After zesting cut lemons and add their juice to the sauce pan.
Stir.

Pour sauce in the prepared pan.

Place chicken in sauce and turn a few times to coat with sauce.

Salt and pepper chicken in pan.

Cut remaining lemons into eight wedges each and tuck around the chicken pieces.

Bake for 30-40 minutes.

You can eat the lemon slices with the chicken!

This does sound delicious if you are a lemon fan. Ina tends to go a bit heavy on the lemon for me (although I love it in desserts). I did her Sole Meuniere, and it was just too tart for me. I think I'll do this and cut back on the lemons, maybe not adding any to the baking process either. Still sounds delish!
